This soup is awesome. I would have NEVER thought of putting cream cheese in a soup!! A friend of mine made this yesterday for her family and she quadrupled the recipe, and she had NO left overs. (7 people) We both ended up making this because the temps here dropped to single digits and our local grocery store had 8 pound bags of potatoes for .69 cents!!! You won't be disappointed.
1) Combine broth, potatoes, onion and spices
2) Boil on medium heat until potatoes are tender
3) Smash potatoes to release starch for thickening
4) reduce to low heat
5) add cream cheese, stir frequently until cream cheese is melted
optional: shredded chicken, corn, or bacon
