Versatile mushroom soup! Add spinach for a little flair!!
1. In a 5-quart Dutch oven melt 2 tablespoons butter over medium-high heat. And mushrooms and cook, stirring occasionally, until mushrooms are tender and begin to brown, about 15 minutes. Transferred to bowl.
2. In same Dutch oven melt remaining 1 tablespoon butter over medium heat. Add onion and cook until tender and golden, about 10 minutes.
3. Stir in flour until blended; cook one minute. Gradually stir in water, broth, thyme, salt, pepper and half of mushrooms; heat to boiling, stirring constantly.
4. In blender with center part of cover removed, to allow steam to escape, purée mushroom mixture in small batches until smooth. Pour purée into bowl after each batch.
5. Return purée to clean Dutch oven; stir in cream and remaining mushrooms with their juice. Heat through (do not boil).
OR
Chop the mushrooms coarsely. Heat the butter in a 3-quart saucepan. Sauté the mushrooms, about 5 minutes. Sprinkle flour over mushrooms to coat. Add the broth gradually, stirring constantly. Bring to a boil. Remove from heat and stir in cream. Place in blender at this point for a smoother texture or leave as is. You can also place half in the blender and leave half as is.
