A lemony creamy goodness for all whipped cream lovers.
1. Preheat oven to 400 degrees F. In a medium saucepan, bring water and butter to a boil. Stir in flour until mixture forms a ball. Remove from heat.
2. Add eggs; beat with a wooden spoon until smooth.
3. Drop batter by rounded tablespoons onto an ungreased cookie sheet ( can use parchment paper). Bake in preheated oven for 30 minutes or until golden brown. Cool.
4. Cut off tops and remove any soft dough inside.
5. For fillin, in a small bowl, beat cream and 3 tablespoons powdered sugar until stiff peaks form. Fold in Lemon Curd. (Recipe follows)
6. Spoon 3 tablespoons filling into each cream puff and replace top. Dust with powdered sugar. Serve immediately or refrigerate up to 1 hour before serving.
Lemon Curd
1. In a heavy medium saucepan, whisk together eggs, sugar, and lemon juice.
2. Add butter. Cook over medium heat, whacking constantly, until lemon mixture thickens and bubbles all over.
3. Immediately pour curd into a bowl. Cover surfacer with plastic wrap and chill.
