Creamy Avocado Dressing

A delicious avocado dressing that tastes great over mixed greens or used as a dipping sauce for fresh veggies.

"I put the garlic cloves in the blender whole, and next time I think I'd chop them first because I had to blend for a long time to avoid garlic chunks. This was pretty strong on the garlic, too, so I blended in half a cup or so of Greek yogurt for a creamy dressing with a milder flavor."

Ingredients

2 tablespoons Olive Oil
3 cloves garlic
6 tablespoons fresh cilantro leaves
1 large Avocado
1/2 medium cucumber; seeds removed and cut into chunks
1 tablespoon lemon juice
salt and pepper; to taste

Servings  

Preparation

Purée olive oil and garlic together until smooth. Next add cilantro, avocado, cucumber, lemon juice and pulse until smooth. Salt and pepper to taste. Enjoy.
