In a medium micro safe bowl, place pudding mix, sweetener, cornstarch, cinnamon and salt. Add 1/3 cup cold water and stir until blended
Add apple chunks to the bowl and toss them in the liquid mixture. Cover bowl and micro for 2 ? minutes. Allow mixture to thicken and cool for a few minutes before removing from the microwave.
Meanwhile, crush granola bar. Once cool enough to handle, stir in granola pieces.
