A lighter, quick Mac & Cheese with wonderful flavor.
IMPORTANT: Do NOT substitute condensed milk for the evaporated milk, it will NOT work. Changing the evaporated milk from 2% to fat free does not change the WW PP.
Cook pasta according to package directions. Drain & set aside.
Sir together evaporated milk, flour and mustard in large saucepan. Add cream cheese, cook over medium-high heat, stirring for about 5 minutes or until just boiling and slightly thickened. Remove from heat, stir in shredded Cheddar cheese (I shred in food processor although you could buy already shredded. 'Old' cheddar gives the best flavour.) Stir pasta into cheese & serve immediately.
Freezes well.
BAKED VARIATION (for those who like a little crunch).
Preheat oven to 350F. Put macaroni & cheese into casserole dish, top with 3 Tbsp Panko breadcrumbs & dot with 2 Tbsp butter. Bake for 30 minutes.
