Suggest a better descriptionMix the grapes with the lime rind and a squeeze of juice, and set aside. Preheat the grill to a medium-high setting. Trim the crusts off the bread. Heat the olive oil and butter i a large frying pan until the butter has melted. Remove from the heat. Brush both sides of the bread slices sparingly with some of the butter and oil.
Toast the bread on the rack in the frill pan for 2 minutes on each side. Cut each toast into four and keep hot in the warm grill. Meanwhile, add the garlic, bay leaf and rosemary to the oil in the pan and heat. Add the onion and stir-fry for about 2 minutes, until soft but not browned. Add the pork and fry over fairly high heat for 3-4 minutes, stirring frequently, until lightly browned.
Add the celery with seasoning and stir-fry for 2-3 minutes until the celery is lightly cooked and the pork well browned. Discard the herbs. Place the toasts on plates. Top with the pork, using a slotted spoon. Keep hot.
Replace the pan on the heat, add the brandy and cook over high heat, scraping all the cooking juices off the pan. Boil hard for about a minute. Add the cream and bring to the boil, stirring. Remove from the heat and stir in the parsley. Drizzle over the pork. Add the grapes and serve.
