In a small sauté pan over medium heat, heat 1 Tbs of honey until it begins to bubble.
Add the almonds and cinnamon and stir until coated.
Heat, stirring frequently until the almonds are lightly browned.
Pour onto parchment paper to cool, spreading them out so they don’t stick together.
Meanwhile, place the halved figs on a baking sheet covered in parchment paper.
Drizzle with the remaining honey, and sprinkle with salt. Roast for 10 minutes in 400° oven.
Pour the figs along with any honey/liquid into a blender or food processor.
Add the Greek yogurt and vanilla.
Blend until mostly smooth (or as chunky as you like your Popsicle’s).
Stir in the almonds.
Pour into Popsicle molds (or Dixie cups or ice cube trays).
After 1 hour, add the Popsicle sticks (otherwise they can fall to either side). Freeze at least 4 hours.
