Creamy Soft Polenta

Great side dish great with stews and casseroles.


2 cups Water
1 cup Chicken Stock
1 cup Polenta; quick or instant type
125 milliliters Cream; thick / heavy
1/4 cup Parmesan; finely grates
50 grams Butter
Salt and pepper

Original recipe makes 4 Servings



Bring water and stock to the boil

Using a balloon whisk, stir in polenta in a thin steady stream

Reduce heat to low and simmer until polenta is thick and grains soft (it should also "fall away" from the sides of the pan as you stir).

Add cream, parmesan, butter and salt and fresh cracked black pepper to taste, all the time stirring

Serve immediately

Wonderful flavor and texture. A quick and easy side. The addition of cream gives the polenta a really nice depth of flavor.
