Put milk, 80g sugar, vanilla into a saucepan and slowly bring to a boil.
Whisk egg yolks and sugar in separate bowl, until mixture is pale and light ribbon consistency.
Pour hot milk into yolks, whisking constantly, then return mix to saucepan
Cook gently until it has thickened slightly, then take it off the heat.
Will curdle if boiled.
Variations:
Infuse flavours into the milk as it is warmed, such as 60g chocolate, 1tbsp coffee powder, 20g sliced ginger, 5 star anise, or a bunch of fresh mint.
