Transfer to a 5-qt. slow cooker. Stir in remaining ingredients except rice.
Cook, covered, on low until vegetables are tender, 4-6 hours.
Discard bay leaves. Serve with steamed white rice, or instant 'dirty' rice.
*You can also brown the meat, dice the vegetables and measure out spices the night before,
then assemble and start cooking the next morning.
