Great for breakfast or as a filling for stuffed and grilled flank steaks. Quick and easy to make.
Cook bacon in saute pan until crisp. Transfer to paper towel and drain off about 1/2 the drippings from the pan. Add the potatoes to the hot pan and spread evenly. Do not stir, but allow to cook until they are nicely browned on the bottom. About 10 minutes should do it. Now turn them over and brown the other side for about 3 minutes. Add the diced peppers and saute until they start to soften (about 2 minutes).
Add in the garlic, Cajun spice, paprika, and scallions. Stir briefly to mix but don't break up the potatoes any more than you have to. Allow to cook for about 2 minutes then remove the pan from heat. Allow to cool a minute or so then gently fold in the crumbled bacon and shredded cheese.
Serve hot with a fried egg on top. Garnish with a dash of hot sauce to squiggle of ketchup if desired.

If using this as filling for grilled meat either stuff the meat right away or don't add the cheese and allow the mixture to cool. Add the cheese just before using this as a filling.
