4 tb Balsamic vinaigrette
2 sl Bread; cubed
12 black olives; Pitted; halved
1 Yellow pepper; de-seeded
250 g bacon; Unsmoked streaky
salad, mixed; Selection
125 g Cherry tomatoes; halved
1 Garlic; crushed
1 avocado; peeled and pitted, Ripe
1 tb olive oil

Original recipe makes 4



1. Grill the bacon until crisp and cut into cubes. 2. Meanwhile arrange the salad leaves, tomatoes, avocado slices, olives and diced pepper on a serving plate. 3. Heat the oil in a frying pan, add the garlic and bread cubes and cook for 2-3 minutes until golden on both sides. Drain well on kitchen paper. 4. Sprinkle the bacon and croutons over the salad and drizzle over the vinaigrette just before serving. NOTES : A delicious light supper or lunchtime dish or an accompaniment for a picnic or barbecue.
