Heat oil to 350 degrees
Whisk in club soda to make smooth batter.
Place panko crumbs In a shallow bowl.
Place a few onion rings at a time into the bowl of batter, turn to coat all sides. Remove from batter and place into pan of panko crumbs, turning to coat evenly. Cook a few rings at a time until golden brown, 2 to 3 minutes.
Transfer to cooling rack over paper towels to drain. Season with salt immediately. Serve or keep in warming oven
Don't over mix batter. Use batter quickly or make half at a time. Substitute vodka for 1/3 of liquid to extend batter time. After a while the batter will form gluten and give you gummy batter
