Quick meal pork chops
Place 2/3 cup corn starch in shallow pan /pie plate. In shallow dish whisk buttermilk, mustard and garlic. Process cornflakes,salt, pepper and remaining cornstarch in processor finely ground and place in dish. heat middle racked oven @ 200* . Score meat thinly with sharp knife on both sides in cross cross pattern. Season with salt and pepper. Dredge in corn starch and shake off excess, coat with buttermilk mix and coat with cornflake mix pressed to place and let stand 10 minutes on racked sheet. Heat 1/3 cup oil in nonstick frypan and cook 4 chops 4-5 mins til browned and flip over and cook till browned when oil in pan shimmers. When internal temp is 140*. Repeat for remaining chops in fresh oil. Drain 30 seconds on paper towel on each side and store in oven on rack till all are cookeded. Serve with lemon wedge.
