Dipping Sauce
In a small saucepan or skillet over medium heat, warm the oil.
Add the ginger, garlic, and red pepper flakes and sizzle for 1 minute. Do not let the garlic brown or it will overpower the sauce.
Add the preserves, water, soy sauce, and vinegar. Whisk to dissolve the preserves and simmer gently for 1 minute. Pour the sauce into a bowl and set aside to cool.
In each of two frying pans over medium heat, warm 1 cup of canola oil.
Drain the seitan and pat dry with a clean towel. Slice it into 1-2 inch rounds, 1/8 inch thick.
Pour the arrowroot onto a plate and dredge the seitan. Shake off excess powder and fry until crisp, about 2 minutes on each side.
Drain on a paper towel and serve hot with the dipping sauce.
