Rinse and drain beans - pick through and discard out any clumps of dirt or broken beans.
Rinse chicken breasts. Add beans, uncooked chicken, tomatoes with juice, box of broth, onion, and taco seasoning. Mix together. Allow crock pot to cook all day. The beans will be soft and the chicken will be tender and ready to shred with two forks. I cook rice on the side and served the chicken and black beans over the rice, topping with various things like cilantro, avocado slices, pico, etc.
Holly88 1 year agoMy husband & 8 yr old daughter enjoyed this, which surprised me only because they are not bean fans. I will make again with less beans, more seasonings and a shorter cook time (I cooked it for 88hrs)

SunnyFLErin 4 years agoThis was okay. It needs something though. I added shredded cheese and salsa, but it was still a little bland. My two year old ate it though, so that's always a plus. I think that if you rolled this filling into tortillas, covered it with enchilada sauce and cheese and baked it, and then serve it with sour cream, it would be fantastic. I'll try that next time. The plus was that is was super easy to make, and it was mild enough to serve to the kids.
