Ingredients

1 can Tomato Paste
2 Cloves Garlic; minced
1 package Onion Soup Mix
2 teaspoons Fresh Oregano; chopped
2 teaspoons Fresh Thyme; chopped
1 teaspoon Salt
1 teaspoon Fresh Ground Pepper
2 lbs Chuck Roast; (trim fat)
1 can Chopped Tomatoes; (drain)
1 med Onion; (chopped)
2 large Carrots; Chopped
1 large Celery Stalk; sliced
2 Bay Leaves
1 med Potato; Chopped

Preparation

In small mixing bowl combine Tomato Paste, Garlic, Soup Mix, Oregano, Thyme, Salt & Pepper. Rub mixture on Roast. Place Roast in Crock Pot. Add remaning ingrediants as well as leftover Tomato Sauce/Paste. Cover and Cook 8-10 hours on Low or 4-5 hours on High.
