Ready in 6 hours

Very tasty and slightly lower fat than those using ground beef.

2 small onions
2 cloves Garlic; minced
1 jalapeno
1 28-oz can whole plum tomatoes
1 6-oz can tomato paste
0.25 tsp. chili powder
0.5 tsp. Salt
1 tbs cilantro; chopped fine
0.5 tsp red pepper
Black pepper; to taste
2 lbs Ground Turkey; lbs
1 dash garlic salt
Black Pepper; to taste
1 15-oz can black beans; drained and rinsed (optional)
9 corn tortillas; 6 inch

Original recipe makes 8

Make the sauce first using a food processor. Chop the onion and jalapeno. Add the tomatoes and minced garlic. Move mixture to a saucepan and add tomato paste, chili powder, salt, cilantro, red pepper and black pepper (if using). Bring to a boil, then let it simmer for 5-10 minutes, (longer is fine).

Brown the ground turkey. Spice it with the garlic salt and pepper to give a little more flavor to the meat. Drain the fat.

Using a large crockpot, lightly greased on the bottom so that the tortillas don't stick, layer 3 corn tortillas, then 1/3 of the meat, 1/3 of the black beans (if using), 1/3 of the sauce and 1/3 of the cheese. Do this 2 more times.

Turn the crockpot on low for 6-8 hours and you have a yummy, homemade, Mexican meal!

You could use less cheese than I did, but we like cheese! [I posted this recipe.]
