In saucepan, cook bacon, celery and onion over medium heat for 10-15 minutes. Drain.
In a 5-6 quart slow cooker, combine all ingredients. Cover and cook on low for 6 hours.
Stir in shredded cheese. Simmer on LOW for at least 1 hour.

CryoFXI would make this again, however did alter a few things along the way. I have made many different corn chowder and while this one is good, I prefer others better. The flavor is good, however, I can arrive at the same or similar flavor with fewer ingredients. For me this was one of those recipes that seems like someone threw together a bunch of ingredients, while emptying out the cupboard. I also thought that zero cheese was needed. The cheese tends to curdle. If you like cheese in your soups, I recommend making a cheese sauce and adding that rather than using shredded. Also, roasting whole garlic will produce more flavor. I use left over corn from the cob that we have grilled the night before. Not a bad recipe, but too many ingredients and cheese it not really needed. I also agree with the others that if you leave a rating, make sure it is about the flavor or the recipe itself and not about the mechanics, like what size crock-pot to use, which it clearly states.1w ago
