Heavy but delicious.
Melt butter, flour and salt. Add milk and cook until thickened. Add cheese.
Put in dish rubbed with melted butter or sprayed with cooking oil and let rest in fridge for a few hours.
When hardened, cut in rectangles, dip in eggs, then bread crumbs and fry.
Serve with a vinaigrette salad.
