Crumbled Feta Couscous Salad

Fresh couscous salad is perfect as an appetizer, lunch or an afternoon snack!


1 cup couscous
1 tbsp. olive oil
1 cup vegetable stock; or water
1/4 tsp. salt
1 each Roma tomato; diced
1/2 cup red onion; diced
1 tsp. mint; chopped
1 tbsp. parsley; chopped
2 tbsp. white balsamic vinegar
4 ounces crumbled feta cheese; Alouette

Original recipe makes 6 Servings



In a medium sauce pan bring water or vegetable stock to a boil then add couscous stirring quickly. Remove from the heat and cover, let stand for 4-5 minutes.

Remove the lid and stir in the olive oil. Pour cooked couscous in a large bowl to chill, stir occasionally. When cooled stir in remaining ingredients and chill completely.
