Cucumber Salad W Freshly Grated Coconut

1/2 c Finely chopped lightly
1/2 ts Sugar; (1/2 to 1)
1 tb Freshly squeezed lemon
4 Peeled; seeded & diced
2 Carrots; peeled and grated
1 Finely chopped serrano
2/3 c Freshly grated coconut
3 Cored; seeded & diced
Cilantro leaves; for garnish

Original recipe makes 6 Servings



When ready to serve salad, combine all of the ingredients in a bowl. Spoon onto individual plates, garnish with the cilantro leaves and serve.
