Cucumber Sandwiches 3 (southern Style)

1 large cucumber; peeled, seeded and coarsely grated
8 oz. cream cheese; softened
1/2 c. Mayonnaise
1 Tbsp. Fresh Lemon Juice
1 Tbsp. fresh dill
3 small green onions; tops, chopped finely
2 Tbsp. Chives; Chopped
Tabasco; sauce
garlic salt and pepper
bread; thinly sliced

Original recipe makes 1



Wring out excess cucumber juice in a clean towel. Cream

cheese with mayonnaise and lemon juice. Add cucumber, onion

and seasonings. Use more mayonnaise if needed for spreading

consistency. Spread sandwiches; cover with damp towel.

Refrigerate several hours before serving. Filling can be kept

in refrigerator for several days in airtight container.

Great recipe :)!! Tweaked it a bit, using chives, parsley and dill from my garden. Served it on pumpernickle, cut it into bite size peices, and everyone loved it! Thanks for posting this dawnrw!

Great recipe. I used onion powder instead of onions and these were fantastic. They were a big hit at a party.
