Quick, refreshing, healthy and tasty.
Combine half of the feta cheese, cucumber, tomato, scallions, olives and beans in a large bowl. Whisk oil and lemon juice in a small bowl; season dressing with salt and pepper. Pour dressing over salad; toss to coat. Season to taste with salt and pepper. (Optional,but recommended: chill in refrigerator for an hour or more.) Sprinkle remaining half of feta over and serve.
Use the beans you like. Garbanzo beans would be a good alternative.
