This is simple and doesn't sound exciting - but everyone loves it. Please note that cabbage and pineapple are not yet grown on the farm. Both are readily available in the local market. The curry you can buy in the local market is good enough for this recipe. (mildish curry) Mayo and/or yoghurt are available in the local market - although natural yoghurt is not available 100 percent of the time.
Mix all the ingredients and chill for 4 - 6 hours. (The longer the better)
This is a make ahead dish and a great potluck dish. I suspect it is key to have fresh pineapple - although I admit I have never tried it any other way. I will often substitute yoghut for mayo on a one for one basis.
