Curries pork sausages in a vegetable and tomato curry sauce served with rice or pasta
Place pure pork sausages in a saucepan add vinegar and bring to the boil, simmer gently until firm and turn off. Drain and allow to cool, remove skins and slice into 1cm peices. Set aside.
Prepare celery capsicum and onion place in saucepan add olive oils and curry powder cook until vegetable change colour and curry powder is fragrant. ( Use your favorite, I use Keens ). Add diced sausages and cook for 5 minutes being careful not to let the pan dry out. Add chicken stock and cook until vegetables are al dente then add tomatos. Simmer for 10 minutes. prior to serving mix cornflour with water to make a paste and add to sauce until a suitable consistency is achieved.
Serve with rice or pasta or mashed potato.
Add salt to taste and some fresh crushed garlic . If you dont like tomato leave it out for a more traditional curried sausages
