It can be tricky trying use up any leftover curry sauce or to use curry with something other than rice. I had some vegetables and curry sauce left over so put it all in a casserole dish for a fuss free dinner. You can also add pasta or chicken but I kept it to vegetables to make this meal a cheap alternative and added couscous to serve.
1. Preheat the oven to 180C.
2. Cut and chop your ingredients then place them into your casserole dish. Mix the mayonnaise and curry sauce together and pour over the vegetables in your dish. I added a spoonful of cream cheese as I had some in the fridge but it is not a necessity so don't worry if you don't have any.
3. Season well and top with some coriander and cumin seeds. Place in the oven for 35 min until browned on top and vegetables are tender then serve.
Alternatively, use a curry paste for a more intense flavour. In fact, do not be restricted by korma, any curry flavour would work well!
