Dad's Breakfast Skillet

My kid's favorite breakfast. Vary ingredients slightly to keep things fresh.


2 cups uncooked potatoes; cut into cubes
1 lb uncooked sausage
1 Green pepper; diced
0.5 yellow onion; diced
0.5 tbsp garlic salt
0.5 tbsp pepper
1 tbsp Lowry's Seasoning; (preference)
0.5 lb American cheese; (Colby works well), shredded
6 Eggs

Original recipe makes 4



Mix all of the ingredients well and put everything except the cheese into a large skillet, making sure to break up the sausage and eggs, mixing the eggs well into the other ingredients. Cook over med-high heat and toss every few minutes until all of the sausage is completely cooked and the veggies are soft.

Dish into bowls and cover with a layer of shredded cheese and allow it to melt.

I've been having a meal very similar to this for dinner at least twice a month with my little brother and his girlfriend. We just call it sausage and tatoes but we do pretty much the same thing except without the eggs. I do believe that the eggs would be great in it. I can't wait to try it this way!

Sometimes I will also add bacon bits or disc the potatoes instead of cube them. Anything to change things up and keep the recipe fresh for the kids. [I posted this recipe.]
