Great when it's cold outside. Amazing with grilled cheese sandwiches.


Ingredients

1 large brown onion; chopped finely
3 small carrots; chopped finely
3 small stalks celery; chopped finely
1 tbls olive oil
3 large chicken breasts; chopped
1 49.5-oz can chicken broth (about 6 cups)
2 14-oz cans chicken broth (3.5 cups)
1 pint heavy whipping cream
8 oz wide noodles
1 small portabello mushroom; chopped
salt; to taste

Preparation

Boil salted water for noodles. When water approaches boiling, saute onions, carrots, and celery in olive oil until soft. Move vegetables to side of pan. Add chicken pieces. Brown chicken pieces while noodles are cooking. Add mushrooms. Once mushrooms begin to cook, add chicken broth. Bring to a boil. Reduce heat and add cream. Simmer for about 10 mins until noodles are done cooking. Drain noodles, add to soup, and cook for about 5 mins.
