My dad knew this yummy recipe from a restaurant he worked at.
Dash some olive oil in a pan and spread around, then, put your burner at medium heat ( or whatever you prefer)Crack however many eggs you want in a bowl and whisk till "liquid". (We would do two eggs per person for a main dish, and one per person for a side) Pour in a splash of milk or half and half ( I don't have perfect measurements for the milk b/c we always eyeballed it :) ) then shake your preferred amount of salt and pepper in and stir together. Test your pan by sprinkling a little water on it with your fingers and if the water immediately starts to pop and sizzle your good to go! Pour all of your mixture into the pan and immediately take a rubber spatula and start pushing around the eggs. Keep doing this taking little breaks to let the eggs cook. When there is no more liquid in the eggs your done! Enjoy hope you like!
Don't cook them to long! They'll get rubbery!
