This is an easy, beautiful, and delicious dessert for a crowd.
1. Bake the brownies according to package directions; cool completely, then coarsely crumble.
2. If using whole toffee bars, unwrap and put in heavy freezer bag. Break into pieces using a rolling pin.
3. Prepare the pudding according to package directions. After refrigerating for 15 minutes or so, fold in one cup of the Cool Whip.
Assembly: Use a large bowl or trifle dish. Layer ingredients as follows: 1/2 of the crumbled brownies, 1/2 of the pudding mixture, 1/2 of the chocolate chips, 1/2 of the toffee bits, 1/2 of the pecans, then a layer of Cool Whip. Repeat layers, ending with Cool Whip. Garnish with toffee pieces. Cover with plastic wrap and refrigerate for at least 30 minutes before serving.
Notes: This recipe came from my Minter Lane friend and excellent cook, Linda Heard. The pudding will be easier to work with if you don''t let it set completely before assembly. You can vary this recipe according to your taste - substitute crumbled Oreos or other cookies, different nuts, even can vary the pudding flavor (1 chocolate/1 vanilla for a milder taste, for example, or use sugar-free pudding). You can also scale it up to feed a crowd. There is never any of this left!
