Deb's Mexi-corn Cassarole

A quick and easy family favorite, one dish Mexican cassarole. Plenty of flavor


1 medium onoin; chopped
1 1/2 lbs ground beef
1 can Ro-tel toamtoes; diced
1 can Mexi-corn; drained
1 8-oz container sour cream
1 can Cream of Mushroom soup; (regular size)
1 1/2 cups of beef broth
1 package regular Taco seasoning
1 package Spicy Taco seasoning
1 bag Tortilla chips
1 16-oz bag cheese (Colby -Chedder); grated, (16 oz or larger)

Pre heat oven to 350 degrees

Cook the ground beef and onions in a skillet

In a mixing bowl combine the Ro-tel, sour cream, Mushroom soup can of Mexi-corn, and 1/2 cup of beef broth.

After beef and onion are cooked through, drain and return to stove. Add both packages of Taco seasoning and 1 cup of beef broth. Stir and cover. Cook for 10 minutes stirring occasional.

Combine the meat mixture with the soup/corn/Rotel mixture

Place a layer of Tortilla chips in the bottom of a 9x13 baking dish. Spoon a generous layer of the meat mixture, top with cheese. Repeat this process topping the final layer with remaining cheese

Bake uncovered for 40 minutes or until bubbly

This is a huge hit! Definitely worth trying. Avocado slices were a nice addition. New family favorite!
