These taste as crispy as wings you would order at the pub... but much healthier!
Pat chicken wings dry with some paper towel.
In a Ziploc bag, shake the chicken in the baking powder and salt.
On a parchment/foil lined baking tray with a greased cooking rack, place wings in line so they are not touching each other. Bake on the LOWER rack (1 below the middle) at 250F for 30 minutes. Move to the UPPER rack (1 above the middle) and bake at 425F for 40 minutes.
Remove and let sit for 2 minutes before tossing in sauce or spice of your choice.
