Suggest a better descriptionBoil potatoes in salted water until tender but slightly resistant when pierced with fork, 15-25 minutes. Drain and when cool enough to handled cut into 1-inch cubes.
In a bowl, combine potatoes, celery and red onion and toss briefly to mix. Set aside.
In a separate bowl combine remaining ingredients except 1 tablespoon parsley. Add to potato mixture and gently toss to mix. Garnish with remaining parsley. Chill at least 1 hour before serving.
