Awesome chili made with a lot of veggies and even the kids eat it all up. This is a very hearty Chili Concarni made with ground turkey instead of ground beef making it a lower in fat dish excellent for diabetics as well.
Cook ground turkey until it is fully cooked. Add two tablespoons of Olive oil if your ground turkey is very lean. If it is not lean then do not use Olive oil and drain any fat left over. Add diced tomatoes and kidney beans. Drain two of the cans of kidney beans and add one of the cans with the juice in the pot. Add both the chili and taco seasoning packets.
Cook for about 20 minutes. Add zucchini, onions and green peppers to the pot and put on medium heat and cook for another 20 minutes. Check pot and stir so that nothing sticks to the bottom.
At the end of the cook cycle I added 6 teaspoons of Chicken Gravy Mix (the powdered Chicken Gravy Mix that you can find at Sam's in the spices section). It thickened it up a bit and added a fantastic flavor.
We like ours a little crunch meaning that the veggies are not mushy but just cooked enough to takes delish!
