Great this time of year when the tomatoes are ripening. Fresh tomatoes from your own garden add an extra sweetness punch to this dinner you just don't get with store bought tomatoes.
Brown the ground beef and onion. Add the taco seasoning mix and prepare according to package instructions. (I use a homemade taco seasoning mix posted as recipe # 97656, I cut the salt in half with no noticable change in taste.)
Warm the tortilla chips in the oven. I found low sodium taco (Presidents choice 1 mg. sodium per 2 tacos) that work great when broken up.
Add just enough milk to the sour cream so it will pour easily.
Layer on the plate tortilla chips (or broken taco), meat, lettuce, tomatoes, sour cream mixture and paprike
Serve.
Great dinner and relatively low sodium, we will make it a couple times a year when the tomatoes are coming out of the garden and are fresh.
