This is a tangy, earthy and easy way to prepare pork tenderloin. It's slathered with a dijon, garlic and herb blend and baked in the oven.

Ingredients

2 pork tenderloins
3 cloves of fresh garlic; minced
1 tablespoon freshly chopped rosemary
1/2 teaspoon onion powder
3/4 teaspoon kosher salt
1/8 teaspoon freshly ground black pepper
3 tablespoons olive oil
2 tablespoons Dijon mustard

Original recipe makes 6 Servings

Preparation

Preheat the oven to 350 degrees. Trim any excess fat or silver skin from the tenderloins. In a bowl, combine all of the remaining ingredients to make a paste. Brush the mixture onto the tenderloins, coating both sides. Place in a glass baking dish and bake until the internal temperature is 155 degrees, about an hour. Remove from the oven and set aside on a cutting board to rest 10 minutes before serving.
