Suggest a better descriptionIn a large cast iron Dutch oven YOU WILL heat over med-high heat 1 TB corn oil.
Season beef short ribs on all sides with kosher salt & pepper.
Put ribs intp pot then brown on all sides,
Reduce to med-heat.
Remove ribs but reserve to side.
Add onion, carrot, celery, & mushrooms.
Saute vegetables until onion is translucent.
Toss in tomato then add garlic.
Cook for 1-2 mins. then deglaze pot with red wine & beef stock.
Return ribs to pot then add Worcestershire sauce & red pepper flakes.
Bring to a simmer then reduce to low-heat.
Cover then simmer for 2 1/2 hrs.
Partially remove lid then reduce sauce down.
Continue to simmer but increase heat.
Serve with mashed potatoes, cooked vegetables & sauce over ribs.
