Fantastic high protein/high fiber version of one of our favorite dishes. I have a lot of kale in the house, so I use that. You can substitute kale and shrimp for whatever vegetables and meat you want. Great recipe to clear the house of items that may go bad if you don't cook them.
Bring chicken stock to a boil. Reduce flame and add quinoa and sea salt to the pot. Cover and let simmer for 18-20 minutes.
In a large deep frying pan (or wok) add grapeseed oil and turn on the flame. When hot add minced onion. Note: if using dried minced onion be sure to reconstitute it in water for a couple minutes. Constantly stirring by flipping the mixture...
Sauté onion for five minutes until tender and then add kale to the pan. Once kale cooks down add shrimp, pepper, and egg. Keep stirring everything. Just as egg is just a little bit runny, add quinoa to the mixture. Continue stir frying and add the sesame oil and soy sauce. Stir fry entire mixture for another 5-7 minutes.
Put in a big bowl and sprinkle some cilantro.
Make healthier: Top with chia seeds if you want a little more crunch.
Make even healthier: Kill the salt content by using low sodium chicken stock, low sodium soy sauce, cooking the shrimp rather than getting them precooked.
