COOK UNTIL ONION IS SOFT AND CLEAR. ADD WINE & RAISE HEAT TO MED-HIGH UNTIL LIQUID COOKS AWAY. ADD RICE & BROTH, BRING TO A BOIL. REDUCE TO MEDIUM LOW AND COVER. SIMMER 16-18 MINUTES UNTIL LIQUID IS COOKED AWAY. RETURN CHICKEN AND ADD CANNED MUSHROOMS - WARM THOROUGHLY. DISCARD BAY LEAF AND SERVE.
