Bring the stock to boil in a medium saucepan over medium heat. Add the sausages and bacon. Cover with a tight-fitting lid and reduce heat. Simmer for about 5 minutes. Remove the sausages and bacon and reserve liquid. Cut each sausage into 4-5 large pieces. Assemble a layer of potato slices in the same saucepan, followed by a layer of onions and then half the sausages and bacon. Repeat the layering process again, and finish with potato slices on the top. Pour the reserved stock over the ingredients and season lightly to taste. Cover and simmer gently for at least 1 hour. Check the potatoes with a fork to make sure they are soft and cooked through. Adjust the seasoning and serve piping hot.
