Great
1. Combine the potatoes and butter in a mixing bowl. Mix into a paste. Add the parsley, salt, cayenne, cream, onion and egg yolk.
2. Shape the mixture into small patties or croquettes. Dip the paties into the beaten egg white, then roll in bread crumbs to coat.
3. Heat the butter in a skillet. Fry the patties until golden brown on both sides. Add additional oil as needed.
