Easy and filling! I made this with what I had on hand in the fridge/freezer. I think it would probably also be good with veggies instead of or in addition to the sausage. You could also use sauteed veggies for the base instead of the bread. Tomato slices would probably be especially good.
Preheat the oven to 400F.
Combine the eggs, water, salt, pepper, and mustard in a small bowl and whisk until the eggs are thoroughly mixed.
Grease an individual casserole dish with 1 teaspoon butter.
Place two slices of bread in the bottom of an individual casserole dish, and place two pats of butter on top of each slice.
Slice the sausages in half lengthwise and place flat side down on the bread.
Pour the egg mixture over the bread and sausage.
Top with the cheese and bake for 15-20 minutes or until eggs are just cooked through.
Serve immediately.
