This is a great recipe for making biscuits quickly and easily for a dinner or using the dough for handheld meat pies!
1. Preheat the oven to 425 degrees F and line a baking sheet with parchment paper.
2. Measure the flour into a large mixing bowl.
3. Add the salt and baking powder and mix well with a whisk.
4. Add the shortening to the flour 4 - 5 tablespoons at a time, cutting it in to the flour with a dough cutter or a fork. Continue until the shortening is fully mixed with the flour.
5. Add the milk a quarter cup at a time, mixing well with a spatula.
6. Mix the dough well. It will be a bit sticky.
8. Turn out the dough on a well floured board.
9. Flatten and then fold the dough several times.
10. Roll out the dough to 3/4" thick.
11. Using a biscuit cutter, cut the dough into individual biscuits.
12. Arrange the biscuits on the baking sheet, keeping them about 1/2" apart.
13. Bake in the oven for 20 - 25 minutes.
Check the biscuits at 20 minutes to see if they are done. If you let them set for several minutes, they will rise a bit due to the baking powder.
You can use this dough for making handheld meat pies. Just form the dough into a ball, divide it into eighths, and roll out each piece into a circle about 6" across. Fill with precooked filling, no more than a couple of tablespoons. Fold over, sealing with water, and slit the tops to vent. Bake at 425 degrees F for 20 to 25 minutes. Let cool till you can handle the pie.
You can substitute lard for the shortening, makes for a lighter tasting biscuit.
