quick and easy approximation of Indian butter chicken
1. Put oil in a medium hot pan. Brown sliced onions until fragrant
2. Mix the spices: garam masala, cumin, curry powder, garlic powder and salt. Rub into chicken pieces.
3. Brown the chicken on both sides.
4. Blend the coconut milk and spaghetti sauce. Pour over chicken.
5. Lower heat to med-low, and cook 30-35 minutes until chicken is done.
6. Serve over rice and garnish with fresh cilantro, if desired
This is just a base. You may add a bay leaf, or fresh garlic, ginger, vinegar, chili powder and chilies (if you want it hotter). You can also add slices of potato and green peppers if you wish to make it into a stew.
