Canned crabmeat makes these delicate patties simple enough for a busy weeknight dinner. For variety, try forming the crab mixture into four thick patties, instead of eight cakes.

1. In a large bowl, combine the crab, 1/3 cup of the bread crumbs and the egg. Reserve the remainder of the crumbs for the coating. Mix in the onions, red pepper, mayonnaise, lemon juice, garlic powder and cayenne.
2. Divide the mixture into eight portions; shape into 2-in. balls.
3. Roll in the remaining bread crumbs. Flatten to 1/2 in thickness.
4. In a large non-stick skillet, cook the crab cakes in butter for 3-4 minutes on each side, or until golden brown.
I like using the Japanese-style Panko crumbs. Season with whatever spices you wish.
I also have modified the recipe to my 'taste' and it has been well-received:
1. I add some cornmeal to the recipe which gives the finished cakes a lovely yellow appearance
2. I add as much all-purpose flour as necessary to ensure that the cakes 'bind together'.
3. I add 1 Tablespoon of baking powder to help the cakes 'rise' to a patty-sized height.
4. Make sure to use 'course' greens (such as broccoli, or other similar stemmed vegetables. This is a great 'contrast' vegetable; and another is boiled beets!
