Simple, extra-creamy fudge in the microwave
Place chocolate chips, sweetened condensed milk and margarine in large bowl. Microwave 6 to 7 minutes at 50% power, stirring thoroughly every 2.5 minutes, until chips are melted. Once chips are melted, stir again until very smooth. Stir in nuts if desired. Pour fudge into an 8 x 8 pan that has been lined with wax or parchment paper and spread evenly. Refrigerate until set. Cut into squares and store tightly covered, keep refrigerated if not eaten in a few days (unlikely!)
You can vary this by using milk chocolate chips, mint chocolate, white chocolate, peanut butter chips or any combination thereof; my family likes the classic combination of dark chocolate with walnuts.
