Enchiladas
Spray skillet with Pam Olive Oil. Pour 1/4 can of Enchilada sauce into bottom of skillet. Layer 4 corn tortilla. Add 1/4 can enchilada sauce on top of tortillas. Add half of the meat/onion mixture, 1/3 of the cheese. Repeat layers ending with cheese on top. Put skillet on medium heat with lid on. When vapor escapes torn to low and cook 20 minutes. Remove from heat and let stand 5 minutes and serve.
Note: This skillet is an America Craft waterless skillet.
Use the cheese of your choice, does not have to be cheddar.
