Heat oil in 12 in. skillet until shimmering. Add chicken strips and stir fry till done, about 5 min. Remove chicken from pan and set aside. Add sliced veggies, except tomatoes, and stir fry till they start browning. Return chicken to pan and add tomatoes. Season with salsa, fajita seasoning, or taco seasoning to taste. Serve with steamed flour tortillas.
